Celery & Creamy Lemon Smoothie

On we go with the second smoothie of the celery celebration week! This is a true flu fighter smoothie, with all the traditional cold remedies mixed together – and the result tastes more like lemon meringue pie than anything else.

This smoothie also happens to be my current number one favorite, as well as that of my boyfriend’s. For so long, every time I asked him which smoothie he’d like to have for breakfast, the answer would be carrot and pineapple. While it is a nice smoothie, I always found it a bit boring, so I’m happy we now share a favorite.

Creamy Lemon Smoothie

I’ve been battling a cold on and off for almost two weeks now. It’s one of those annoying ones that don’t even raise a fever, but still keep you from doing anything too wild, because otherwise you’ll be feeling like crap for the rest of the day. So in addition to my everyday breakfast smoothie, I’ve taken to having a lunch smoothie as well, just to get a bunch of extra vitamins in. Plus I’ve been too tired to even think about making actual food, and as much as I enjoy cooking, I find it quite nice to just make a sandwich and blend up a quick smoothie.

Of course I vary my smoothie ingredients day to day, but if I had to pick just one smoothie for fighting a cold, today’s celery smoothie would definitely be it. The base is made with bananas and celery, which we already know has tons of health benefits, including a high in vitamin C content, there’s lemon, fresh ginger, and turmeric. Probably the only traditional flu fighting ingredient it’s missing is garlic – and as open as I am to new flavor combinations, I just wouldn’t recommend adding garlic to your smoothie. Ever.

One final note: This smoothie is somewhat thinner than my usual smoothies, so freezing the bananas beforehand is essential! You can also add some ice, but it will dilute the taste, and as they melt it will become even thinner. So if you want thicker, I would rather add more frozen bananas, but keep in mind that they will also bring more sweetness in. On the other hand, if you’re more into sweet than sour, that might just be a good thing!

An invigorating smoothie that tastes more like lemon meringue pie than anything else. If you're a huge celery hater, this is the perfect way to learn to like it - just cut back on the amount indicated in the recipe, and you won't taste it!

Servings: 2
The Base
  • 3 celery stalks
  • 1 banana, frozen
  • 1-2 lemons, zest & juice
The Flavor
  • ½ cup non-dairy yogurt or quark
  • 1 inch ginger
  • ½ tsp turmeric
  • 1 tbsp agave syrup (optional for extra sweetness, leave out for low FODMAP)
  1. Blend it all up and serve!
